How about a version of "London Calling" or "Tommy Gun" (or any other Clash song for that matter)? Maybe too obvious, or maybe not--what do you think?

Elvis sang "London Calling," along with Bruce Springsteen, Dave Grohl, and Steven Van Zandt, at the Grammy Awards in 2002.
This morning you've got time for a hot, home-cooked breakfast! Delicious and piping hot in only 3 microwave minutes.

I knew that, but I just thought that hearing him do his interpretation of that song on his own might be nice to hear. I really enjoyed the Grammy performance also.

Yeah, but it would have been cooler with just Elvis on vocals, 'much as I like Brucie

John Hiatt's Lipstick Sunset.
Would definitely have to be backed by the Imposters on this one, though.

I would like to hear EC sing Twist of Fate by Bob Dylan from Blood on the
Tracks... one of Bob's greatest.. curious what EC could do with it.
